Spicy tofu with cinnamon, star anise & black pepper

Ingredients
 
 

  • 400 g firm tofu
  • 2 tbsp maizena or rice flour
  • 300 ml neutral oil
  • 1 red onion app. 100 g
  • 1 tbsp brown sugar
  • 1 tbsp grated ginger
  • 1 stick cinnamon
  • 2 piece star anise
  • 3 slices orange peel use a vegetable peeler
  • 10 g coarsely ground black pepper 1 tbsp
  • 100 ml light soy sauce Chinese or Japanese style
  • 60 ml water

Instructions
 

  • Cut the tofu into cubes of approx. 3 x 3 cm. Spread the tofu cubes out on kitchen paper and pat them dry.
  • Put the tofu cubes in a bowl and sprinkle them with the two tablespoons of cornstarch or flour. Toss the tofu cubes so that they are well coated with the cornstarch or flour.
  • Heat the oil in a frying pan and fry the tofu cubes until golden brown. Leave the cubes to dry on some kitchen paper. Pour most of the oil from the pan into a bowl, keeping about 3 tbsp. of oil in the pan. Keep the rest of the oil and use it later for other dishes.
  • Chop the onion and fry for 6 – 8 min. in the remaining oil on medium heat together with cinnamon stick, star anise and orange peel
  • Add the brown sugar and allow it to caramelise slightly
  • Add the ginger, the soya sauce and the water. Let it boil for a moment and then add the tofu cubes. Stir gently while you let the sauce simmer and until the tofu cubes are coated by the soya sauce. The sauce will thicken as the cornstarch on the tofu cubes absorbs the liquid.
  • Now add the coarsely ground or crushed peppercorns and stir into the sauce. Finish with freshly chopped spring onion and fresh coreander leaves if desired. Serve with boiled rice and steamed or boiled greens such as broccoli, spinach, green beans, bok choy or pak choi.
