Oatmeal Lace Cookies

Ingredients
- 40 g plant based butter very soft
- 100 g brown sugar dark or light
- 2 g salt
- 3 g ginger powder
- 1 tsp orange zest
- 30 g orange juice
- 50 g oatmeal
- 20 g almond flakes
- 10 g rice flour
Instructions
- Preheat oven to 175 °C conventional or 165 °C convection.
- Stir the softened butter with the sugar until creamy.
- Add the oatmeal, rice flour, orange zest, salt and ginger powder and stir to form a batter.
- Finally add the orange juice and mix well.
- Make small mounds of this batter (e.g. with two teaspoons) of approximately 10 grams. Place these mounds at a distance of 8 to 10 cm from one another on the baking sheet covered with baking paper (to prevent them from spilling during baking).
- Bake for approximately 10 – 12 minutes until the cookies are evenly golden brown and (after cooling) thoroughly crispy.
Notes
Store in a tightly closed box or jar.
